I've just spent the weekend with my daughter on a 'Modern Patisserie' course led by baker
Ross Baxter. Even though I do very little baking these days the instructions were good enough for me to be pleased (Amazed might be nearer the mark!) by the results!
Small confession - the white chocolate ring and swirl were made by our tutor as part of his demonstration. The room was rather warm for amateur chocolate handling!!!!
